[Recipe] Lemon Tahini Dressing (3 ways)

I wasn’t even particularly tired this morning, so I’m not quite sure what came over me.  But it has been one. productive. morning. Letmetellyou.  Here’s hoping this workday flies by because I am ready for the weekend. How about you?

Wednesday night, Andrew cooked a double batch of brown rice for us to use in various ways throughout the rest of the week.  Wednesday’s dinner was Roasted Veggie Bowls: roasted carrots, zucchini, and brussels sprouts with roasted chickpeas over brown rice with Lemon Tahini dressing.

The picture doesn’t do it justice; it was really tasty.  Obviously, any combination of veggies would work, and really, any grain could work in place of brown rice.  What brought everything together was the tahini dressing:

Lemon Tahini Dressing

(Just in case: c = cup, t = teaspoon, T = tablespoon)

INGREDIENTS

1/4 c tahini

2 garlic cloves

Juice of 1 lemon

2 T olive oil

2 T water

S & P to taste

INSTRUCTIONS

1. Combine all ingredients in a blender and blend 10 seconds.  Add additional water, salt, and pepper as needed.

Lunch yesterday was a variation on Wednesday’s dinner: Diced heirloom tomato & chickpeas over brown rice with Lemon Tahini dressing.

Loved it.  Tomatoes are the fruit that everyone treats like a vegetable, but this tomato was all fruit.  It was sweet and juicy and the perfect texture to bite right into, if you’re into that kind of thing.

I made one final iteration of the dish for dinner last night: Roasted carrots & brown rice with Lemon Tahini dressing.  It sounds almost too simple, but it was so good.  The ratios were right, and after my home workout, it was the hearty meal I needed.  [I learned Wednesday night that the trick to roasting carrots is to not cut them too small.  Also, adding a little honey to the olive oil/balsamic marinade helps create a nice ‘caramelization’ (spell check tells me this is not a word) on the outside. I roasted for 30 mins at 425 degrees, flipping every 10 mins.]

WORKOUT

Last night, I thought I was in the mood for yoga, but just couldn’t find anything that appealed to me on youtube.  Instead I found a ‘dancer workout’ on Amazon: Ballet Beautiful.  I say “dancer workout’ as opposed to ‘dance workout’ because you’re not actually dancing. It’s more a workout for toning and getting into dancer shape, using a series of tiny movements to classical ballet music.  It was HARD in a good way.  I like that I had to take breaks throughout, because now I want to do it again and see how quickly I can improve.  Ballet Beautiful is free to stream for Amazon Prime members.

I feel like I’ve been in a workout rut lately, and need to switch things up.  Zumba was a good place to start, and I definitely plan to do more Ballet Beautiful workouts.  If it’s not too hot this weekend, maybe I can convince Andrew to do a hike in the canyons.  What weekend workouts do you have planned?
