Hey there, happy campers!
Understandably, the desire to bake a big batch of cookies decreases significantly during the summer months. Let me introduce to you a cookie worth turning on your oven for: Happy Camper Granola Cookies.
These cookies are basically my favorite homemade granola recipe in cookie form. They’re soft and chewy, and between you and me, the batter is delicious.
Like homemade granola, these cookies can be fancied up with all your favorite trail mix ingredients OR kept super simple – in their most basic form, these are still award-winning oatmeal raisin cookies.
Happy Camper Granola Cookies
(Just in case: t = teaspoon, T = tablespoon, c = cup)
1/2 c coconut oil
1 c packed light-brown sugar
1 t vanilla extract
1 1/4 c flour (I used whole wheat)
1/2 t baking soda
1 t salt
This is where you can go wild with customizations – just be sure to add at least 2 cups total of add-ins.
1/2 c rolled oats
1/4 c flaxseed meal
1/2 c raw pumpkin seeds (pepitas)
1/2 c raw sunflower seeds
1/2 c raisins
1. Beat oil and sugar on medium for about 3 minutes. Beat in eggs and vanilla. Add flour, baking soda, and salt; beat until combined. Stir in remaining granola ingredients until combined.
2. Refrigerate dough at least 1 hour (or until ready to bake).
3. Preheat oven to 350 degrees. Drop heaping tablespoons of dough onto baking sheets. Bake about 15 mins, rotating halfway through. Let cookies cool completely before removing from baking sheets.
I had intended to include chocolate chips, but didn’t have any on hand. I actually like the way they turned out, more like a trailmix cookie that you don’t need to feel bad about eating first thing in the morning.
Depending on the mix-ins you use, these cookies can be chewy, crunchy, sweet, or salty – just like your favorite granola.
