The weather in LA can be so unpredictable!
I’m officially one day away from freedom, aka vacation, so I’m counting down the
hours seconds until 6pm when I get to go home, throw a bunch of extra, unnecessary items in to my already-packed suitcase and head for the airport. Andrew and I will be spending 10 luxurious days in Canada relaxing, exploring, and eating poutine! I can’t wait.
I’ve got a couple things planned for the blog while I’m away, so it won’t be radio silent around here. I’ll also be taking a fruit hiatus on Instagram in order to document the trip, so keep an eye on the right sidebar for some real-time photos!
Let’s do a quick recap of yesterday, shall we?
I’ve stopped posting pictures of my daily bulletproof coffee because I feel like it’s redundant and not all that interesting to see a white mug of coffee sitting in various locations on my desk. But that doesn’t mean I’m not still drinking it every single day.
Lunch was a hearty kale salad that I prepped over the weekend. I like being able to cross “eat something green” off my To Do list after lunch; it takes the pressure off dinner. I also just flat out crave salads now. No, I don’t crave plain lettuce, but I do crave lettuce tossed with toasted nuts, fresh tomatoes, avocado, and hard boiled egg. Making appetizing and creative salads… makes me eat more salad.
Another daily eat that I don’t always post pictures of: fruit.
And an afternoon snack to fuel my after-work workout and tide me over until dinner.
WORKOUT – Last night’s workout was my new fave, Ballet Beautiful via Amazon Instant Video. I made it almost the entire video without stopping. I’m not quite there yet, but I’m definitely improving, and I’m noticing some pleasant increases in core strength as well.
Even though dinner was off the hook color-wise since I had a green salad for lunch, it ended up starring a big salad anyway. Seeing as we’re about to leave for a vacation, I wanted to use up as many leftovers as possible. And the best way to do that is in a salad.
The combination of ingredients we had laying around – red pepper, onion, hard boiled egg, canned tuna – pretty much screamed nicoise salad to me, so that’s what we had. I also experimented with a Pinterest recipe I had saved for “sweet potato stacks”, but it needs a little tweaking before I’m ready to share it.
The results weren’t bad; just not spectacular.
After dinner, I whipped up a big batch of Happy Camper Granola Cookies to take to some friends we’ll be seeing on vacation this week. They turned out so well – basically like granola in soft, chewy cookie form. Recipe coming soon…
