What I Ate Wednesday #10

Good morning (or afternoon, depending on where you are)!  It’s Wednesday, so let’s take a look at what I ate yesterday:

WIAW

9:00am – 8 oz of Water first thing (trying to make this a habit)

12:30pm – Lunch: Green salad (power greens, pea shoots, tomato, bacon,  goat cheese),

3:30pm – Green Tea

4:30pm – Afternoon fruit snack: Yellow peach, shared with Andrew

8:30pm– Dinner: BBQ Shrimp and Squash w/ sauteed Tomatoes over brown rice.  Once the rice and grilled veggies were done, I added them to the sauteed tomatoes and let everything meld together for a few minutes. It turned out almost like a paella with the rice on the bottom crisping up just a little. Yum.

WORKOUT

I went in with a plan: Full body, short & sweet

Arms: 3 x 10 slow pushups (4 counts down, 1 count up)
Legs: 3 x 10 slow squats (wide, parallel, one-legged to the front)
Core: 3 x 60 second planks
Cardio: High Intensity Intervals (warm up, 2 mins 30 seconds sprinting, 1 min walking/jogging, cool down)

 

RECIPE

It’s been way too hot to cook this week. Sunday morning, I literally googled “no-cook dinners for hot summer days”.  I decided that a big batch of a raw broccoli salad (think pasta salad, but without the pasta) would serve us well throughout the week. It was a good thought, but it’s only Wednesday and we already polished it off.

Raw Broccoli Summer Salad

INGREDIENTS
(Just in case: c=cup, T=tablespoon, t=teaspoon)

1 large or 2 small heads of broccoli, washed and chopped into bite-sized pieces (the smaller the better, but not so tiny that they turn to powder)
1/4 c dried cranberries
1/4 c pine nuts
4 pieces of Bacon, cooked, cooled, and crumbled
Small handful of crumbled goat cheese

Dressing (this also makes a delicious and versatile salad dressing)
1/4 c olive oil
1 T red wine vinegar
1 t balsamic vinegar
2 t honey

INSTRUCTIONS

1. In a jar with a lid, combine all dressing ingredients and shake well.
2. Combine all salad ingredients in a large bowl and toss with the dressing. Enjoy!

Note: This is another one of those salads where you can mix and match, add or subtract ingredients as you please.  Subtract the bacon and it’s a vegetarian side dish. Double the bacon and your boyfriend might even eat it.  I hope you enjoy, let me know what you think in the comments.
