Healthy Snacks for the World Series

As we all know, the World Series Game 7 is tonight… Go sports! Yay teams!

Andrew and I will be watching with… moderate interest. Who do we want to win? Meh… a good friend of ours is from Kansas City, so we’ll be happy if the Royals win. But I’m from the Bay Area so I’ll also be rooting for the Giants. Basically, this game will be a win-win, either way.

More important than the winners and the losers, however, are the snicks and the snacks. Here’s a look at what’s on the menu in our household:

Zucchini Fries
Cubed zucchini pieces dipped in an egg wash and then rolled in seasoned panko crumbs, baked at 400 for 20 minutes.

Roasted Broccoli Skewers
Broccoli tossed in olive oil, salt & pepper, roasted at 400 for 15 minutes.

Loaded Sweet Potato Skins
Sweet potatoes, baked at 400 for 45 minutes, then cut in half, innards removed and mixed with greek yogurt, shredded kale, salt & pepper.  Skins drizzled with olive oil, baked 10 more minutes, then reunited with their delicious filling, topped with shredded cheese and bacon, and baked for 10 final minutes.

These are just a few of my favorite “game foods”. I like to keep things heavy on the veggies, and always find a way to incorporate bacon. Always.

Go teams!

Question: Who do you want to win the World Series? In this case, like I said, I’ll be happy with either team winning. Usually though, I decide based on the team whose outfit uniform I like better.
