It may not feel like fall, but technically Autumn is upon us. So here is my obligatory pumpkin recipe to celebrate the season.
Every year around this time, my mom sends me a fall care package and every year she includes this Williams Sonoma Spiced Pecan Pumpkin quick bread mix. And this year she actually included TWO mixes! Excellent.
I’m going to be completely honest, this recipe uses a packaged mix. I KNOW, for shame. But sometimes, you need a warm pumpkin treat and you need it now.
As you might expect, this quick bread could not be easier. All you have to add is eggs, butter, and water. You can bake the mix into a loaf, a cake, muffins; it’s all good. Add chocolate chips and it’s really good.
1 package Williams Sonoma Spiced Pecan Pumpkin quick bread
8 T butter
1 cup water
1/3 cup chocolate chips (optional)
Preheat oven to 350 degrees and grease a standard size muffin pan.
Combine all ingredients in a medium sized mixing bowl and stir.
Taste the batter, it should be amazing. Assuming it is, divide what’s left evenly between the muffin cups.
Bake for 25-30 minutes, until a toothpick inserted into the center of a muffin comes out clean. Let cool for at least 15 minutes before digging in.
