Yesterday morning I got a taste of what unemployment is going to feel like, and SPOILER ALERT, it was great. I had a doctors appointment at 10:40am, so technically, I could have/should have gone into the office from 9-10 and then to the appointment, but feeling bold, I told my boss I wouldn’t be in until after, around noon. BAM.
On a side note, what are the chances my boss actually believed I had a doctors appointment and not a job interview? The answer to that is definitely “slim”. Why is that satisfying?
Ready for a full rundown of all the things I ate yesterday? The anticipation is just too much, I can tell. Here we go…
9:30am – Bulletproof coffee, made the right way (in the blender) at home.
12:30pm – Lunch: TJ’s “Roasted Butternut Squash, Red Quinoa and Wheatberry” Salad (pretty good, despite the golden raisins that were NOT advertised on the front)
4:00pm – Afternoon fruit snack: Fuji apple w/ TJ’s Sunflower seed butter
8:30pm – I swear I don’t usually eat more than one Trader Joe’s salad in a single day, but after working out last night, Andrew’s uneaten Pasadena Salad seemed like a much faster/easier option than anything else in the fridge. Plus, it was going to expire, so I didn’t really have a choice. I made some sweet potato wedges to go with it, for good measure.
9:15pm – Freezer Fudge (TJ’s sunflower seed butter, coconut oil, honey, chocolate chips. Recipe here)
What DIDN’T I eat (Wednesday)? This too-beautiful-to-destroy USC cake, seen during an afternoon walk around the Lot.
