An Ode to Jam Bars

FACT: These bars are not new to my kitchen

FACT: This is Andrew’s favorite recipe of mine

FACT: You should make these bars right now

Jam Bars

INGREDIENTS

1 1/2 cups flour
1/2 cup sugar
1/2 t baking powder
1/2 t salt
1/2 cup unsalted butter
1 egg
1 cup fruit jam (Knott’s Berry Farm Boysenberry is by far my favorite)

INSTRUCTIONS

Pre-heat oven to 375 degrees and grease a 9″ baking dish.

Combine flour, sugar, baking powder and salt in a large mixing bowl. Cut in the butter, until the mixture resembles coarse crumbs. Stir in egg to form a crumbly dough. (Note: I used my stand mixer for this batch, but I’ve made these by hand without any electric equipment and had no problem.)

Press 3/4 of the mixture into the greased baking dish. Top with jam and evenly spread almost-but-not-quite to the edges of the pan.

Top with remaining crumb mixture.

Bake 30 minutes or until pale golden brown. Let cool and then cut into squares.

No matter what wacky ingredient I try swapping into this recipe (coconut oil, gluten free flour, almond meal, coconut sugar, brown sugar, apricot jam, jelly, preserves) or what ratio of crust-to-jam I follow (mostly crust, minimal topping, equal crust-to-topping), they always taste amazing.

WIAW #20: Jam Bars & My First Ever Spin Class

Today is Thanksgiving Eve(!) among other things… like Wednesday. And as I am accustomed to doing on Wednesdays, I will be sharing an honest look at everything I ate during yesterday’s waking hours.  Just be warned, I made jam bars yesterday so there’s a lot of that going on.

Does anybody have any Thanksgiving Eve traditions? I’ve got jam bars ready for any midnight turkeys that pop out of the chimney tonight. (Can you imagine? A gang of turkeys invading your home via the chimney, making a huge mess of jam bars all over the place? Ick. Good thing we don’t have a chimney.)

 

 

What I Ate Wednesday 11/26/14

8:00am – Bulletproof coffee

Coffee was a must yesterday morning. I attended my very first spin class. It wasn’t in any way intended as a form of pre-Thanksgiving workout torture; I’ve just always been curious about spin classes and hadn’t thought to pull the trigger until this week when the timing of the LA Fitness class happened to fit into my schedule perfectly.

I’ll say this: thank goodness for coffee. Spin classes are no joke! I asked a girl on the bike next to me for some help setting up my bike, and once it was out in the open that I was a first-timer, I had multiple women (and men) giving me all sorts of advice. The best piece of advice (that turned out to be the most true): “Push yourself but don’t overdo it because it’ll feel easy today and you won’t be able to get out of bed tomorrow.” Hah!

The spin class was challenging, but in a good way. As with most intense exercise, the feeling (endorphines) you get afterward is what draws you back in. It does for me!

 

10:15am – Protein shake on the way to Trader Joe’s

I use vanilla Sunwarrior protein powder. It’s one of the better tasting powders I’ve tried. I also had a peanut butter Quest bar on the way back home.

 

1:00pm – Lunch time o’clock. I sautéed a handful of shredded kale with garlic and scrambled 2 eggs right in. A little bit of parmesan cheese on top and an organic gala apple on the side.

A week or so ago, I mentioned to Andrew that I was going to make a batch of jam bars at some point before Thanksgiving. Since then, I’ve been trying to keep fewer sweets in the house and had been putting off the jam bars thinking maybe Andrew would forget. Hahahaha. Andrew doesn’t forget about jam bars.

2:00pm – I had to make sure they turned out alright.

5:10pm – Raw almonds and dark chocolate chips for a study snack.

7:30pm – Nicoise salads for dinner. Mixed greens, green beans, tuna, radish, roasted gold potatoes, and a poached egg.

8:45pm – One more jam bar for good measure 🙂

A jam bar action shot, post-“cheers”. Andrew and I “cheers” to pretty much everything, all the time. It’s normal.
