A Select Few #FridayFavorites

Hi everyone!

What’s new, what’s good? Are you guys ready for the weekend? Andrew and I have a busy couple of days ahead, but it’s all fun stuff AND the weather in LA this weekend is supposed to be in the 80’s. High five!

Enough with the chit-chat, let’s get right into this week’s #FridayFavorites. These are  just a few of my favorite cats, workouts, and meals from the week. I’d love to hear some of your favorites, in the comments below!

Favorite cat nonsense of the week: I don’t know if you guys heard, but Kevin and Andrew formed a boy band named Kevin and the Dreamboats and this is their album cover. It’s moody, kinda like the album.

Favorite workout of the week: Blatant plug for the lower body workout I posted earlier this week. I’m actually planning to do this one again today.

Favorite meal of the week: Based on ease of execution and abundance of recreation opportunities, I’m going to say that Wednesday night’s slow cooker butter chicken was my favorite meal of the week.

Throw this together Sunday morning, let it slowly cook all day, and you’ll have a tasty meal ready by dinner time, along with plenty of leftovers to eat throughout the week.

Slow Cooker Lightened Up Butter Chicken

1 package boneless, skinless chicken breasts, chopped into 1-2 inch pieces
1 yellow onion, diced
4 cloves garlic, smashed
1 6 oz can of tomato paste
1 14oz can of light coconut milk
1/4 cup whole wheat flour
spice mixture:
2 t garam masala
1 t curry powder
1/2 t chili powder
1/2 t dried ginger
1/2 t salt
1/2 t black pepper

1. In a skillet over medium heat, sauté the onions and garlic for 1-2 minutes until fragrant. Add the spice mixture, and stir to incorporate. Add tomato paste, coconut milk, and flour and whisk to combine. Cover and let cook for about 5 minutes (the mixture will thicken up a bit).

It will go from looking like this…

2. Transfer the contents of the skillet to a slow cooker, add the chicken, and stir to coat the chicken in the sauce.

3. Set the cooker for 3 hours on high or 5 hours on low. Serve over a bed of rice, with a salad, or some naan.

A couple links of note from around the web…

How To Be Cool On Instagram, According To A Teen [Buzzfeed] – This made me laugh after having quite a lengthy debate about selfies last night. I’m admittedly new(ish) to Instagram and the whole selfie game, but I had no idea there were so many unspoken rules! People have a lot of opinions about selfies and Instagram in general, but I think what we knew all along was really true: teenie boppers teens really are cooler than the rest of us.

17 Fab Things For The Hip And Cool “Crazy Cat Lady” [Buzzfeed] – Because everyone knows that cat ladies are indeed hip and cool. This is what I’ve been telling you guys this whole time. (I also legitimately want most of these items.)

My absolute favorite moment of the week, however, was last night when a group of us surprised our friend, Nicole, with some belated birthday drinks at Corner Door. It was one of the very few surprise parties where the birthday girl showed up having absolutely no idea what was going on. She was shocked and it was priceless.

Hilariously, this is my only picture of the night:

That is one large glass of wine… Happy birthday, Nicole!!! And happy Friday to the rest of you. Have a great weekend. 🙂

As always, you check out what others are loving this Friday, on Heather’s site.

    1. I agree! Boy/cat bands are super under-represented in the music industry these days. 😉 You have a fabulous weekend, too!
