Bad morning, everyone…

APRIL FOOLS. I hope you’re all having a great morning and enjoying my favorite holiday. I ate some food yesterday, do you want to hear about it? On the menu were pancakes, a tuna lunch wrap, candy and pizza. Sounds… indulgent? But everything was either homemade, healthier than it sounds or at least really worth it.   Let’s take a quick look back at yesterday’s eats. It’s Wednesday, after all.

What I Ate Wednesday Tuesday 3/31/15

 

Before I forget… I know you guys are enthralled by my meals, but if you want, you can see what other humans are putting on their plates over on this awesome blog.

 

Eating anything for breakfast other than bulletproof coffee is very out-of-character for me, but Andrew had a 9:30am meeting on this side of town yesterday, so we got to have breakfast together. He was feeling pretty left out about some pancakes I made last week, so I whipped up a double batch of 4-Ingredient Protein Pancakes for us to share. (Other pancakes, and others)

I had a cup of normal, non-bulletproof coffee with my pancakes. It was kinda weird. I missed the butter. It reminded me of being at a diner for breakfast and asking if they can make a latte and they look at you like you’re snooty-as-hell and bring you a cup of black coffee, which is fine with me, I have nothing against black coffee, I just prefer a latte if it’s an option. Jeeze.

Anywho!

Lunch was a tuna wrap with lettuce, avocado, and sweet pickles. Andrew and I are on a pickle kick right now. I can’t believe it took me this long to discover tuna + pickles.

Around 3 or 4pm (or both), I had a handful of mini chocolate whopper Robin Eggs. I don’t know what it is about these little candies, but I dig them.

Yesterday’s workout was a strength session focusing on the lower body, followed by some treadmill sprints at the gym. Neither Andrew nor I love the after work crowd, but you gotta do what you gotta do. We both knew we had pizza to look forward to.

Dinner was leftover pizza from Monday night. Homemade pizza is one of the fastest, easiest weeknight dinners that we make around here. Monday night, Andrew rolled out a pre-made pizza dough (from Trader Joe’s) and we topped it with marinara sauce, shredded raw cheddar cheese, onions, broccoli, and salami. Baked at 450 degrees for about 10 minutes, this particular pizza served up more than 4 meals. Not too shabby.

Soo…. today is my birthday! I mentioned yesterday that I’m taking the day off from studying, but if some flashcards make an appearance at some point just know that it’s because I like studying them, not because I have to study them. I’ve also got a tiny bit of freelance work to finish up, but once that’s done I’m free to claim my complimentary birthday drink at Starbucks and bake something with sprinkles.

AND! Andrew and I are going to Sugar Fish tonight for dinner because on your birthday you get a free meal! There are tons of places that offer this type of promotion, but Sugar Fish is easily the best deal in (this) town.

  1. Happy birthday, Amy! Yay for you! My hubby and I made a pizza on Sunday night and took the leftovers for lunch the next day. But we followed nearly the same recipe — with store-bought dough, etc. So much better to make it yourself! And your tuna/pickle/avo combo sounds awesome! I must try that! Happy WIAW!
