Well good morning to you!
How is your week going so far? Things are pretty busy over here, but it’s nice to be busy sometimes. Sometimes is the key word there.
After I got my NASM certification, I thought I’d take a few days to relax after having spent every moment of every day studying for the past several weeks, but I was immediately bored of that. So I printed out a handful of resumes and went looking for a job.
Timing really is everything because the first place I walked into, a small gym right around the corner from our apartment, hired me on the spot. Someone had just put in notice earlier that day, so I totally lucked out. My official first day was Monday and I’m still getting the hang of things, but so far so good.
Working at a gym so close to home is great for two reasons: I can walk to work and I can walk to the gym. These are both huge perks for someone who doesn’t have a car.
I certainly didn’t expect to be working so soon after getting my certification. I actually thought passing the test would be the easy part, and trying to find a job with so little experience would be the real struggle. Things seem to have a way of working out. (Get it!? Workout pun!)
So that’s my long-winded life update. On to the regularly scheduled programming.
What I Ate
Wednesday Tuesday 4/28/15
8:15am – Bulletproof coffee while putting together some workouts for the week.
11:30am – Overnight oats that I prepped right inside an almost-empty jar of sunflower seed butter. In this batch: oats, chia seeds, cinnamon, blueberries and almond milk.
1:30pm – For lunch, I made some tuna salad, scooped it onto a big pile of spinach and shredded carrots, and threw some pickles
at the problem on top. Not the prettiest bowl of food, but it was tasty.
Turned into this…
4:30pm – I finally ate the last of the kiwis. It only took two weeks. Sorry kiwis, but this was not your best crop. I can’t wait for peaches to arrive at the farmers’ market. Any week now… 🙂
6pm – I realized I wasn’t going to make it until dinner, so I snacked on a KIND “chewy with a crunch” bar. I like these, but they’re not very filling. Good for a small snack before dinner, not good for a hike.
8pm – Dinner was a crustless quiche, so technically a frittata, that used up leftover broccoli, cauliflower and onion.
A quiche is such an easy one-pan dinner. You saute all the veggies on the stove to start, add the eggs and cheese, then move the pan into the oven under the broiler for just a couple minutes at the end. Try not to completely blacken the top like I did, unless you really like those ‘crispy bits’. Cheddar cheese on top helps to disguise the char.
After dinner, I got some good work done on my coloring book while Andrew and I watched StarTalk with Neil deGrasse Tyson on NGC.
