Spring Leek Salad + Pinterest-Inspired Workout

Hey there!

It’s really starting to warm up here in LA. Is anyone surprised? I’m actually a little shocked by just how warm it’s getting this early in the year. It’s supposed to hit 90 today, and this beach town doesn’t usually see temperatures above 80 degrees.  Cancel the hot dinner plans, we’re eating salad.

Andrew and I came across this rather large leek at our local farmers’ market last weekend. I have never seen a leek so big.



I was starting to run out of ideas in terms of what to do with the thing. I know a lot of people use leeks in soup, but it’s a little too warm for that. We’ve slow roasted some of it and made a nice risotto, but I’m more than ready to polish the rest of it off with a big, hearty salad.

1 bunch lacinato kale
1 medium leek (or about a third of a jumbo leek)
1/2 cup dried cranberries
1/4 cup crushed hazelnuts
1/4 avocado, cubed

Any oil-based salad dressing will work well, but I’m partial to this one.



Wash, dry, and thinly slice both the kale and leek. Combine with the cranberries, hazelnuts, and avocado. Toss with the dressing and allow to marinate for at least one hour, up to overnight.

Pinterest Problems

I have a bone to pick with Pinterest… I was perusing the P yesterday for workout ideas, as I often do, and I came across this workout:

At first glance it looks fine, eye-catching even, with an easy to remember number scheme. But then I started thinking about how difficult it would be and how long it would take for most people to do 100 real, full out squats with proper form (myself included). And 90 walking lunges is a bit over the top, as well. Not to mention the fact that this pinner recommends completing the circuit 2 to 3 times.

Currently, there’s no such thing as Pinterest Police so please be careful, my friends, when attempting workouts that you find online. And this goes for the ones that I post, too! I probably don’t always do a good enough job of drawing attention to my disclaimer, but you should always check with your physician before starting a new exercise program and pay close attention to proper form when attempting exercises that are new to you. Most importantly, listen to your body and do what feels right for you.


With all of that said, here is a modified version of the workout that I managed to complete in about 20 minutes. If you’re feeling up to it, give it a try. Or not. You do you!

WIAW #30: Dreaming of Disneyland


If I seemed obnoxiously pumped up yesterday (simply because of having a productive Monday), then watch out because I am a ball of excited energy today. Do you want to know why?!

As soon as I hit “publish” on this post, Andrew and I are going to Disneyland! I’ll most certainly give a full recap on our adventures in the happiest place on earth, upon our return. But in case you’re wondering, here are the things I’m most excited about (in this order):

  1. Churros (note the plural form of the word ‘churro’)
  2. Space Mountain (hello, space)
  3. Cars ride in California Adventure (was not yet open last time I was at Disneyland)
  4. Dinner at Blue Bayou inside Pirates of the Caribbean (we’re gunning for a waterfront table!)


What I Ate Wednesday, the post where I run through an entire day’s food intake, from the moment I wake up until the moment I go to bed. Get ready for too much information.

What I Ate Wednesday Tuesday 2/3/15

8:15am – Bulletproof Coffee. I’m running out of new places to pose my coffee.

After some blogging and work, I started to feel the workout window of opportunity slipping away. So before I lost all motivation, I unrolled my yoga mat and pieced together an Arms and Abs workout.

12:30pm – Broccoli & kale scrambled omelette. Rather than scrambling up the eggs once they had been added to the veggies, I let the eggs set and grated a little bit of pecorino cheese on top. Then I folded the whole thing in half and dug in.

After lunch, I was planning to knock out a few hours of work but I had technical difficulties, argh. Plan B was to spend the afternoon studying, which I suppose was an equally valuable use of my time.

4:30pm – Study break for a sweet and juicy Oro Blanco grapefruit. It only took about 25 minutes to peel.

8:00pm – For dinner, I wanted to use up some of the food we’ve been stockpiling in our freezer, so I pulled out Andrew’s two-step Turkey burgers, which we had with roasted broccoli and an avocado kale salad.

I love kale salads, but they require a little bit of prep ahead of time. Raw kale can be a bit harsh, so I try to give it a couple hours to marinate in  whatever dressing I’m planning to use with that particular salad. If you’re short on time, however, you can always get right in there and use your hands to massage the dressing into the kale.

And lastly, an after dinner fortune cookie for good luck.


One final side note: Do you guys watch the Bachelor? Because this season is a train wreck that I cannot tear my eyes away from. Kelsey is such a creepy weirdo!

Question: When’s the last time you went to Disneyland? Do you have a favorite ride/attraction/food? 

The last time I was at Disneyland was almost 10 years ago! Churros are obviously my favorite food item in the park, and I love Splash Mountain (which is closed right now), but so much has changed since that last time I was there that I bet I’ll have a few new favorites by the time I get home tonight.
